Recipe: Wholesome Seedy Cookies with Jam (~jinghan)

A better thing to do with your Fridays that is not doing maths, is to bake! Here is a wonderful recipe I tried for the first time last week and deemed to be a success among all my friends and family. It was inspired by a cookie that I had in the dinning hall while in America and was looking for a recipe that would have both the seedy cookie and the jam, but in the end found that adapting this cookie by putting in jam worked the best.

Ingredients
1/2 cup rolled oats
1/3 cup pumpkin seeds
1/3 cup sunflower seeds
1/3 cup raisins or sultanas — jinghan says: I replaced this with dried cranberries and also you can add a handful of desiccated coconut
1 1/2 cup flour
2 Tbsp water
120g butter
2/3 cups brown sugar
2 Tbs honey
1 tsp baking soda
1 tsp cinnamon
a pinch of salt
Recipe is quite flexible. Vary the amount of flour, oil and honey depending on your preference. You can also reduce or increase the amount of seeds of your choice. I once used soy flour for the recipe and it turned out well. I’m a honey person, but you can use brown sugar and control the amount between 1/3 – 2/3 cup. I put raisins or sultanas as the natural sweetness, but if you just want the seedy flavour, leave the fruits out.
Methods
Line the baking tray and preheat the oven to 170C
Combine all the dry ingredients in a bowl
Melt butter, water and honey in a pot. When it’s melted, add baking soda.
Pour the liquid into the dry ingredients and mix well
Put a spoonful of mixture on your palm and make little balls and flatten them with your hands
jinghan says: I made a little well in the middle of each biscuit and put a little jam in the middle of each with a teaspoon before baking
Bake for 15-20 mins until golden.
